Summer Barbeque Menu

Live, Love, Laugh, Barbeque! There are just ten weekends of summer!

To live a normal life as a successful bariatric post-op we need to plan ahead and be ready for different food situations – and a summer weekend barbeque with friends and family doesn’t need to be a reason to fall off the wagon. We should have a tasty bag of tricks so we never feel as if we are being punished, deprived, or on a diet!

Our Summertime Barbeque Menu is so delicious that no one will ever suspect that these dishes are both healthy and very low in carbohydrates. Serve this meal to your entire family without hesitation and wait for the compliments!

We start off with a deep pink pitcher of Strawberry Lemonade; you won’t believe how much flavor a handful of frozen strawberries can infuse into ordinary Crystal Light. Make two pitchers, this will go fast.

Everyone loves barbeque sauce but even a tablespoon of bottled brands have enough sugar to ruin an RNY’s day. Make a bowl of our Homemade SF Barbeque Sauce and use it on everyone’s Spicy Turkey Burgers; your entire crew will love the bold flavors.

Our side dish of Cowboy Beans is so satisfying that you’ll be proud to take them to a backyard party and no one will ever suspect that they took just fifteen minutes to prepare.

Mandarin & Pecan Slaw will be a new family favorite; the sweet and sour dressing takes it all the way to gourmet.

Lastly, you can impress everyone with delicious Blackberry sauced Coconut Panna Cotta; Italian for cooked cream. People will talk about this sugar free dessert long after the sun has set.

We have just ten fleeting weekends of summer and whether you prepare a single dish from this menu or our entire meal, it will celebrate a milestone – staying happily within bounds, placing a positive focus on flavors & foods we can have, and living, loving, and laughing all the way through our wonderful new life!

 


STRAWBERRY LEMONADE

So easy it’s ridiculous; the berry flavor is so good!  -SM

One tub Crystal Light Lemonade sugar-free drink mix
6 to 8 frozen strawberries

Add two quarts of water to the Crystal Light drink mix in a decorative pitcher. Add frozen strawberries and allow flavors to blend while chilling in the refrigerator for at least two hours.

Per Serving: 5 Cal; 0 g Protein; 0 g Tot Fat; 0 g Carb; 0 g Fiber; 0 g Sugar


COWBOY BEANS

Serve with shredded cheddar, chipotle hot sauce, and sour cream to add additional layers of flavor. -SM

1 tablespoon olive oil
One large onion, diced
2 garlic cloves, sliced
One, 15 ounce can black beans, drained
One, 15 ounce can pinto beans, drained
One, 15 ounce can white beans, drained
One, 16 ounce jar of your favorite salsa (I use Frontera or Zapata Fire Roasted)


Sauté the onion and garlic in olive oil in a nonstick skillet over medium high heat for 10 to 12 minutes, until softened.  Add the beans and salsa bring to a boil, lower heat and simmer 10 minutes.

Makes 8, one-half cup servings.  Per Serving: 52 Cal; 5 g Protein; 1 g Tot Fat; 8 g Carb; 4 g Fiber; 0 g Sugar

MANDARIN PECAN SLAW

The sweet oranges and toasy pecans give one more variation to the picnic classic. - LF

One 10-ounce package coleslaw mix
1/2 cup Libby’s Splenda-sweetened mandarin oranges, drained, chopped
1 tablespoon minced red onion
1/4 cup diced green pepper
1/3 cup chopped pecans, toasted
1/2 cup Hellmann’s Light mayonnaise
1 tablespoon white vinegar
1 tablespoon Splenda
Freshly ground black pepper

In a large bowl combine the coleslaw mix, oranges, onion, green pepper, and pecans.  In a small bowl stir together the mayonnaise, vinegar, Splenda, and black pepper.  Pour over the cabbage mix.  Chill for at least two hours.  Makes 10 servings.

Per Serving: 69 Cal; 1 g Protein; 6 g Tot Fat; 4 g Carb; 1 g Fiber; 2 g Sugar; 91 mg Sodium

SPICY TURKEY BURGERS

With no bread or cracker crumbs these burgers are very low-carb and soft on the pouch. - LF

One 12-ounce package ground turkey
1/2 cup minced onion
2 teaspoons chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons Homemade No-Sugar Barbeque Sauce
1/2 cup shredded jack cheese
1 egg

In a large bowl combine turkey, onion, chili powder, salt, black pepper, barbeque sauce, cheese, and egg.  Mix just until combined. Form into 6 patties and grill over medium heat for 5-6 minutes.  Flip burgers and continue to grill for 6-8 minutes more or until no longer pink in the middle.  Serve in a lettuce leaf with additional barbeque sauce.  Makes 6 burgers.

Per Serving: 243 Cal; 20g Protein; 14 g Tot Fat; 6 g Carb; 0 g Fiber; 3 g Sugar; 371 mg Sodium

Mouthwatering NO-SUGAR BARBEQUE SAUCE

This recipe makes a big bowl that will keep you in sauce for most of the summer. Perfect for grilled chicken or salmon too! - SM

One, 20-ounce bottle Heinz ketchup
2 - 3 tablespoons Susan Maria's Cancun Chili Mix (start with 2 and add more to taste)
2 tablespoons Gulden's mustard
3/4 cup DaVinci Sugar Free Caamel Syrup


Simmer ingredients in a small saucepan over medium low heat for 15 minutes for a snappy no sugar bbq sauce that your entire family will love. Ummmm, makes four cups to sauce your ribs, chicken, salmon, and shrimp.
